Spinach Artichoke Quesadilla

Whole wheat tortillas
Yellow Onion
Fresh mushrooms
1 jar of marinated artichokes
Fresh Spinach
Shredded zucchini

Toppings:
Greek yogurt
Avocados

Sauté onions first until soft in olive oil, salt and pepper. Throw in mushrooms, soften. Then add spinach, artichokes, and zucchini and soften.
Add a little cheese to the tortilla to bond everything together and create a quesadilla.
Top it with avocados and plain Greek yogurt.

Yummy!
