Veggie Shmorgeshborg




Shredded carrots
Shredded cucumbers
Sliced bell peppers (multicolor)
Diced bell peppers (yes both)
Sliced green onion
Sliced red onion
Sliced tomatoes
Diced mushrooms (big chunks, this is the meat!)
Sliced Romaine lettuce
Salt, pepper, lemon juice

Top with hummus roll in cabbage leaf

Also so so good the next day in scrambled eggs!!




Quinoa, Squash, Zuchini




If you couldn't tell, I love squash and Zuchini! It's so easy to make and you can have it with anything.. And Amelia will eat it most of the time. So here's another combination that we all really liked.
Quinoa - Cooked in rice cooker
And
Steamed Squash and Zuchini-cooked along with the Quinoa in the steam basket of the rice cooker

I put olive oil, salt, garlic powder, and pepper in the veggies before and a little after they cook.

Put in on a bed of shredded carrots and diced cucumbers (new favorite thing)
Drizzle with a lemon vinaigrette or Italian dressing (optional)
Shred a little mozzarella cheese on top- wall-la!!
Easy!
I make as much as I can fit in the rice cooker!

"You scared me!"




We had the funniest situation last week on the way to Grandma Johnson's house. Once we told Eilene about it she gave us the great idea to write all these cute little moments down so we don't forget them.
So lately we've been dealing with Amelia's new sleeping habit of staying up all day until about 4 or 5 when she can't stay up any longer and zonks out. Sleeping child = good, but at 5 in the afternoon = bad!! Even if its a 20 minute nap this gives her a boost to stay up till 1 a.m.! So needless to say we try everything we can to keep her up or try and do an earlier nap.
So we are on our way to Grandma Johnson's house around 4 or 5 one afternoon and realize this is the worst combination (sleepy kid and a car go hand in hand) so Jedd checks on her the whole way there to keep her alert so she doesn't fall asleep. We're just about to Crismon and Jedd and I realize we got caught up in a conversation and haven't checked on her in about 2 minutes.. Sure enough, Jedd looks back at a dosing off sweet little girl and immediately yells out of first instincts "Amelia!" She throws her hands up in the air, her eyes shoot open and look at him; there's a split moment there where they both think the same thing (Amelia: "should I cry?! Jedd: "oh, no she's gonna cry, I just freaked her out)
So after processing what just happened Amelia realized what was going on and started to laugh! Full on genuine belly laugh! And here comes the best part "Daddy, you scared me!! - I sleeping! " all while laughing as she said it. She repeated "Daddy scared me, I sleeping!" She had processed in her mind exactly what happened and how she felt about it, it was too cute!
We were all laughing so hard it was the cutest little moment for our family.
