Spicy Ground Chicken




Chicken mixture
1lb ground chicken
1 minced onion
1 jalapeño
2 Roma tomatoes
1 bell pepper
Garlic salt
Salt
Pepper

Stuff-able Items:
Butter leaf leaves
Halved Bell Peppers
Corn Tortillas


Chicken mixture:
Sauté onions with jalapeños then add the bell peppers and tomatoes. Season with garlic salt, salt and pepper. Cool vegetables. Once the vegetables are cooled, combine with the ground chicken and brown in a frying pan.

Stuff-able Items:
For the Bell Peppers, cut them in half and put them in a bowl of water facing down to where the water covers at least half of the pepper. Microwave for 3 minutes.

Bruschetta

Roma tomatoes
Mozzarella
Basil
Cilantro
Olive oil
Garlic salt
Salt
Pepper
Balsamic

Bread:
Sliced French bread
Coat with a mixture of olive oil, garlic salt, salt and pepper.
Broil in over till golden brown.

Put topping on bread, serve and eat immediately






Johnson family grilled cheese

Pretty much the best creation on earth!

Whole grain wheat bread
Any cheese
Veganaise
Tomato
Jam

Butter (with real butter) the outsides of each piece of bread. Put cheese in middle and grill on the pan. Top with Veganaise and a tomato or with just jam.

Soooo amazingly good!



Eilene's Spanish Salad/Soup

Salad:
Romaine lettuce
Black beans
Corn
Tomatoes

Toppings:
Avocados
Fritos
Ranch

Side soup:
Red bell pepper soup
Taco seasonings

So easy!!
Cut out the ranch and it's even healthier :)



Spinach Artichoke Quesadilla

Whole wheat tortillas
Yellow Onion
Fresh mushrooms
1 jar of marinated artichokes
Fresh Spinach
Shredded zucchini

Toppings:
Greek yogurt
Avocados

Sauté onions first until soft in olive oil, salt and pepper. Throw in mushrooms, soften. Then add spinach, artichokes, and zucchini and soften.
Add a little cheese to the tortilla to bond everything together and create a quesadilla.
Top it with avocados and plain Greek yogurt.

Yummy!
