Janet's healthier/ yummy cookies


Substitutions:
Substitute Butter for puréed white beans OR Coconut Oil
Substitute White Sugar for Coconut Palm Sugar
Optional Addings:
Add Pecans

Spicy Ground Chicken




Chicken mixture
1lb ground chicken
1 minced onion
1 jalapeño
2 Roma tomatoes
1 bell pepper
Garlic salt
Salt
Pepper

Stuff-able Items:
Butter leaf leaves
Halved Bell Peppers
Corn Tortillas


Chicken mixture:
Sauté onions with jalapeños then add the bell peppers and tomatoes. Season with garlic salt, salt and pepper. Cool vegetables. Once the vegetables are cooled, combine with the ground chicken and brown in a frying pan.

Stuff-able Items:
For the Bell Peppers, cut them in half and put them in a bowl of water facing down to where the water covers at least half of the pepper. Microwave for 3 minutes.

Bruschetta

Roma tomatoes
Mozzarella
Basil
Cilantro
Olive oil
Garlic salt
Salt
Pepper
Balsamic

Bread:
Sliced French bread
Coat with a mixture of olive oil, garlic salt, salt and pepper.
Broil in over till golden brown.

Put topping on bread, serve and eat immediately






Johnson family grilled cheese

Pretty much the best creation on earth!

Whole grain wheat bread
Any cheese
Veganaise
Tomato
Jam

Butter (with real butter) the outsides of each piece of bread. Put cheese in middle and grill on the pan. Top with Veganaise and a tomato or with just jam.

Soooo amazingly good!



Eilene's Spanish Salad/Soup

Salad:
Romaine lettuce
Black beans
Corn
Tomatoes

Toppings:
Avocados
Fritos
Ranch

Side soup:
Red bell pepper soup
Taco seasonings

So easy!!
Cut out the ranch and it's even healthier :)



Spinach Artichoke Quesadilla

Whole wheat tortillas
Yellow Onion
Fresh mushrooms
1 jar of marinated artichokes
Fresh Spinach
Shredded zucchini

Toppings:
Greek yogurt
Avocados

Sauté onions first until soft in olive oil, salt and pepper. Throw in mushrooms, soften. Then add spinach, artichokes, and zucchini and soften.
Add a little cheese to the tortilla to bond everything together and create a quesadilla.
Top it with avocados and plain Greek yogurt.

Yummy!

(Jen's) Grandma's Famous Fried Chicken






Jenny's Grandma's Fried Chicken with a Honey Pistol Twist
Soak bonless chicken breast in salt water for 30 minutes to 1 hour
Drain and let chicken dry completely
In a large Ziplock bag, put approximately 4 cups of flour for approximately 4-8 chicken breasts
To the flour, add salt/pepper/canyenne pepper (any other flavors you like: lemon pepper, Mrs. Dash, etc.)
Place chicken breasts in ziplock back and shake to coat chicken
In a large skillet, coat bottom of skillet with 1 inch of cooking oil; turn stove onto medium-high heat
Do not put chicken in the pan until the oil is ready: to check if oil is ready, take a pinch of flour and throw in pan. If it sizzles and dissolves immediately, it is time to add the chicken
Place the chicken in the skillet, do not overcrowd
Let cook on medium-high heat for approximately 5-7 minutes (when the chicken is deep golden brown, it is time to flip)
Flip the chicken and let cook on medium-high heat for approximately 3-5 minutes, then reduce heat to medium-low and cover with a lid
After 1-2 minutes, take the lid off and add 2-3 tablespoons of water and immediately cover again (the steam will soften the chicken but keep the crispiness, also)
Check to see if the chicken is cooked through by cutting into the thickest part of the breast to check for white and clear juices
Glaze the chicken with honey while it is still in the pan
When the chicken is cooked, take it out of the pan and place it on a plate and cover with tinfoil to keep warm while you make the gravy
White gravy: While letting the chicken cook, mix a packet of powered milk and water in a separate bowl (for 4-8 pieces, use about 4-5 cups of water to 1 packet of milk.) The powdered milk is used so that the milk does not curdle while making the gravy (if you do not have powdered milk, mix 2 cups of milk with 3 cups of water.) Now in the pan you just cooked the chicken in, turn up to medium-high heat. There should be bits of chicken and oil in the pan. Add about 2-3 tablespoons of dry flour to the pan and scrape the bottom of the pan, then slowly add the milk mixture and start whisking fast! Add salt and pepper to taste.
This may take a few tries but is well worth the effort!
You can say THAT again! Man-o-man was this a hard one for me for some reason! Ive tried making this several times but this time I followed the recipe eXACTLY step by step, I think the trick to it for me was to make sure to follow the cooking times that Jen lists above exactly as she lists it :) I wasn't brave enough to attempt the gravy yet, I substituted it for a packet of turkey gravy instead -yummy!
So as the side I made a green bean casserole in a pie crust, and that turned out great!! -super yummy!!
